Going back to the original question about how to format this once he resigns, for multi-member races I honestly just leave the race as-is except for adding a note on the original race page. There is a way to show a vacant seat, but if the vacancy is filled relatively quickly, and because this is just a county-level race, it's really not worth it to go through all the trouble.
Once a new person is selected, I'd use that race to override this one for dates after the selection.
Sounds about right. I've done similar for 2person races where one resigns/dies. Sometimes if the vacancy is extended you create a holdover race to recognize the one (or two people) still in office.
